Hi folks,
I recently came to know another Southern girl blogger and it's been like visitin' with kinfolks when I go to her site.

The subject of Banana Pudding was mentioned- so thought I'd post my version here! :)
This is the recipe I have used for over 40 years! :) It's a blender recipe. (Vanilla Cream Pie) It's for pie but is perfect for the banana pudding, too. ( I reduce the flour a little bit for pudding...I always use Nabisco Nilla Wafers and Carnation canned milk)
You can see this little book has been well used- with all the evidence from so many years past on the pages! I could type it up and throw the book away- but I WON'T! This is HISTORY!! My girls-someday- will fight over ownership of this book! Lol- Maybe my granddaughter will end up with it! hahaha
We never have a holiday without this...and whatever else we may have, you can bet the Banana Pudding is the thing that
gets gone first!

One of the few recipes I specialize in is banana pudding. It is totally from scratch ingredients and Nilla wafers are the only kind to use. This came down through my wife's clan and I modified it just a bit to suit my taste. If on the rare occasion there is some left over, that is part of my breakfast next morning. :) ec
:) I remembered you had mentioned Banana pudding before!
lol- oh, that one serving left over is GREAT for an early breakfast...before anyone else remembers it! haha

Yummmmm!! I love your eggwhite topping-- I can never get mine that light & fluffy. I declare that picture looks good enough to eat, lol!!

My meringue topping always turns out well!
...a couple tips that might be helpful...have your eggwhites at room temp (so after seperating the eggs, leave the bowl with the whites out of fridge until ready to use)
I beat my egg whites with that little electric hand mixer I've had for MANY years(one of my girls gave it to me when she was a teen)
...never add your sugar until your meringue is Stiff...and add it in a little at a time and keep beating it all into the mixture well...Last-add a little vanilla!
I think adding the sugar too soon is a common mistake.
Some ppl use cream of tarter for the stiffness- but I usually don't have any :) and find that I don't need it anyway!
My meringue never has that sugery-gritty- taste and texture! :)

Yum. I make it once in a while - usually without the meringue because I get lazy.
It looks so good I may go back to meringue at least once in a while.
I'll remember that about the Cream of Tartar. The only thing I keep it around for is egg whites and now I find out I don't need it.
Never too old to learn a new trick despite what they say about old dogs.

(without the cream of tarter)
I always use the egg whites because the recipe I have calls for the yolks in the pudding mix....so I don't want to waste the whites!
...and the meringue makes for a more festive look anyway! This is always part of our Thanksgiving and Christmas goodies!
